n Europe, phycocyanin is used as a colorful food ingredient without restriction. Phycocyanin is used as a blue source in a variety of foods and beverages in countries such as China, the United States, Japan and Mexico. It is also used as a colorant in nutritional supplements and pharmaceuticals, with added amounts ranging from 0.4g to 40g/kg, depending on the desired depth of color of the food.
Phycocyanin is extracted from spirulina using mild physical methods, such as centrifugation, concentration and filtration, with only water added as an additive.
The whole extraction process is closed to avoid the mixing of pollutants. The extracted phycocyanin usually comes in powder or liquid form and is supplemented with other excipients. (For example, trehalose is added to make the protein more stable, and sodium citrate to adjust ph.)
Phycyanin usually contains peptides and proteins (10-90%, dry weight, including proteins complexed with phycyanin), carbohydrates and polysaccharides (dry weight ≤65%), fats (dry weight <1%), fibers (dry weight <6%), minerals/ash (dry weight <6%), and water (<6%).
